You could also decide to choose something that you cannot normally sense (e.g. hearing bat echolocation sounds)

Site and taste are something that would be a bummer to live without, smelling has been out of the question for over a decade, so I’m absolutely NOT going back to it, and that leaves sound.
I am unsure I could live without music.

Probably smell would be least annoying, assuming my taste remains unaffected. And I’d choose to be able to smell lavender.
Guess I’ll only feel joy from now on.
I think limiting one’s sense of smell is probably the least-restrictive.
