I skim and skip through the trailer to see what the game and gameplay look like, and all I see are screens of text with random text or quotes that tell me nothing about the actual game and gameplay.

Mate I missed every single one I was skimming for gameplay.
Don’t you understand? That IS the gameplay! You act out the entire cutscene with the most in depth and engaging control scheme Rockstar has ever developed! (tap A for 5 minutes to talk)
Search for “longplay <game-name>” on YouTube and you’ll find video of someone playing just about any game.
If it’s a visual novel or heavily menu- or dialog-based, there really isn’t anything more to show usually.
